Could you list what information each person has access to and what assurance you have about their ability to keep their knowledge confidential?
Then measure how concentrated it is and how much it is distributed.
How can you control everything and therefore know how much it would cost you if your know-how were even partially lost?
How much could your competitors benefit if they got hold of it?
How much would it cost you to have to reconstitute it following an attack?
Until you know how to answer these questions you will not be able to scare yourself enough!
